Ridge Gourd is one of the most commonly used vegetables in Indian cuisine. Scientifically known as Luffa acutangula, it is cultivated both as a summer and rainy season crop. Let the curry cook for 4 to 5 minutes. Then add chopped ridge gourd, pour ½ cup water, and give the blend a good mix. Let it cook for 8 minutes until the veggies turn soft. Garnish with the coriander leaves.
Wash the ridge gourd thoroughly under running water. Chop it into bite-sized pieces without peeling it. In a pan, heat the oil and add mustard, cumin, sesame seeds, chickpeas, and black lentils. Fry until they turn golden brown. Add curry leaves, crushed garlic clove, dried coconut, and 1 red chili. Add chopped ridge gourd, salt, and sprinkle asafoetida and turmeric, and stir the mix for 2 to 3 minutes. Cook for another 5 minutes, garnish with roasted sesame seeds and peanuts, and enjoy with rice or flat wheat bread!
